Honey Sriracha Chicken

Big news (for me anyway!) : I started a new job three weeks ago! I am so excited and loving it so far! I never thought I would leave the company I have worked for the last ten years, and I was a little nervous to completely switch it up but I did. The job change has led to many other changes in my life too… Namely I have an extra hour and half at home everyday since the commute is much shorter now. Because of that, I have been able to stay on top of my housework better, and I have been cooking almost every night so I can have leftovers to eat at work for lunch. I also am trying to make a month-long menu plan that was inspired by my new favorite blog Sew Much Crafting. Because I am looking at 20 to 25 meals at once, I have been much more apt to try some of the recipes I have pinned instead of the same old recipes I rotate over and over.

I had pinned this recipe for Honey Sriracha chicken that is cooked in a Crock Pot. Are you kidding? You had me a Sriracha. You kept me with Crock Pot! Onto the menu plan it went.
I got a little excited and decided to go ahead and cook it one night in the oven instead of the Crock Pot, and let me just say it was delicious!

All I did with the chicken breasts was put salt and pepper on them and then baked them until they were almost done. While they were in the oven, I mixed up the sauce. I strayed from her recipe a little to make it more for my taste (and to substitute for some ingredients I did not have… whoops!).

20130924-203342.jpgMy sauce had 2 tablespoons of ketchup, 2 tablespoons of soy sauce, 1 table spoon walnut oil, half cup of honey, 1 and a half tbsp of Sriracha, and 1 and half tablespoons of rice vinegar. Whisk that sucker up and brush it on the chicken, then cook it for the remaining cook time. Voila!

I had some extra sauce and poured it over the finished chicken and rice I served it over.

I am currently between computers so I cannot post the PDF of the recipe just yet, but I will as soon as I replace it.
The next time I make this, I will definitely try it the original recipe. I keep thinking how much better this would have been had I added the onion. Since this has been added to the rotation, I feel certain it will not be long before it finds its way onto my plate!
